I have been so bad about posting!!! It has been so crazy here for the past few months. I have been helping out at the office working a few extra hours...then we were dealing with this...then I was working more hours...I finally decide to clear my schedule and concentrate on my home, family, and work.
That was alot of snow!!! Well, I thought I would share a recipe that I tried a few weeks ago. Tom knew that I was going to be making salmon for dinner...his last words as he was headed out the door (he knew I was trying a new recipe) were "Don't ruin the salmon!" Talk about pressure!!! Okay, I'll admit it, this was the first time I have ever made salmon...I actually had to look up on the internet how to remove the skin! Don't laugh...The pressure was on...I was told not to ruin it!!! Well, this recipe was easy and it turned out great. You have to try it!
Ingredients
4 cups of sliced yellow squash
8 ounces cherry tomatoes
2 tablespoons olive oil
1/8 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
4 portions salmon fillets, about 1 1/2 lbs skinless
juice of 1/2 lemon
Pesto
1 packed cup basil leaves
1/4 cup parmesan cheese
1/4 pine nuts
3 tablespoons olive oil
1/4 teaspoon salt
1. Preheat oven to 400 degrees. Place squash, tomatoes, olive oil, garlic powder, salt, and pepper in a 3 quart baking dish and toss to coat.
2. Place salmon fillets over vegetables in baking dish and squeeze lemon juice over all.
3. In a food processor, combine all pesto ingredients, pulsing until a fine paste is created.
4. Spread pesto sauce evenly over salmon fillets. Bake 15-20 minutes, or until salmon is flaky and vegetables are tender. Serve immediately.
I have to give credit where credit is due...this recipe came from a new cook book that I just purchased from QVC. It is called Hot Recipes In Cool Dishes by Tara McConnell. The baking dish that I used is from her Temp-tations line. Love them!!! You can prep, cook, serve, and store all in one dish. I hope you will give this one a try. Trust me...it was yummy!!!
